Our first restuarant started in 1959 in Pueblo, Colorado on Lake Avenue. Cooking in our family comes from city and villages from Old Mexico, our parents were born in Gualajuato, Chihuhau and Jalisco, Mexico. The migrated into the United States during the Mexican Revolution of 1911, home steading in Colorado as migrante farm workers. The family gathering of festival, weddings, births, funerals, batismos, special calendar holidays (Los Santos) meals were cooked, expecially Lent. (Marisco) group of farm workers would gather together on weekends and have horse racing and marichi music, dancing and a little Tequila. We cooked 200 lbs of Carnitas and Chicharrones at one time in a black kettle. We still have that kettle.. Our grandmother and mother are artisans of the Highest Mexican Cuisine
