You may of heard Rachel Ray drop the term "EVOO" like it was some ip middle-school slang, but for a serious introduction to this antioxidant-rich elixer head over to EVOO Marketplace (no affliliation) in LoDo. for a taste tour.  The concept is straightforward: help customers develop a palate for tasting the unique flavors and varities of premium extra-virgin olive oil from around the world and balsamic vinegar from Modena, Italy.  The system is simple; try before you buy.  Pick which oil or vinegar you're curious about and sample a drizzle on a piece of bread or sip it straight.  The selection is superb!  For extra-virgin olive oils you'll find everything from garlic to Meyer lemon to white truffle fusions plus you'll learn about the olives behind the oils, too, whether they are Ascalano olives from California or Frantioi from Tuscany.  Among the balsamic vinegars you'll learn to tell the difference between a 12- and 18- year vintage and taste ones that have been fused with flavors like cinnamon pear.  Be forewarned: this could become a new obsession!
